Disk thrash for virtual memory. All those applications don’t go to sleep when real ram is used up. All of their memory pages keep swapping from memory to disk. Each open app gets a turn at having real RAM. Hence the big SSD write load. Plus some apps will be Rosetta run legacy code, which likely has a memory-speed trade-off. Keep loading past Real RAM and say goodbye to performance for any PC.
